Avocado stones contain perseorangin, a pigment that can produce “eight vibrant shades ranging from light yellow to deep reddish-brown,” the company claimed. This development is part of the group’s Total Crop Use strategy.
Historical documents refer to the use of an indelible ink made from avocado stones by the Spanish conquistadores, as reported in “Perseorangin: A natural pigment from avocado (Persea americana) seed”, published in 2019 in Food Chemistry.
